As 2025 winds down, we can’t help but look back with full hearts and endless gratitude. Thirteen years ago, we were serving carne asada tacos from a tiny late-night cart in Old Town—braving the wind, rain, and snow while dreaming of something bigger. Thanks to your support, that dream became food trucks, then a brick-and-mortar home, and this year, national attention from USA Today as one of the Best Restaurants in America.

But nothing compares to what happened right here at home. We are incredibly proud to share that The Taco Stop has been voted 1st Place for Best Taco and Top 3 for Best Mexican Dining in NOCO Style Magazine’s 2025 “Best Of” Awards! We’ve been striving toward this since 2020, and finally reaching first place feels like a milestone built by every late-night shift, every staff member past and present, and every customer who has cheered us on from the cart days to today. Your loyalty is the reason we get to cook with love every day—and we will never take that for granted.

To celebrate both the season and this huge win, we’re bringing back one of our most requested desserts: the Apple Crisp Chimichanga. Warm apples, a hint of cranberry, a crispy tortilla, cinnamon crema, and a scoop of ice cream—it’s the coziest holiday treat you’ll find in Fort Collins, and it’s available for a limited time only.

As we head into the holidays, please make note of our special hours:
We’ll be closed December 23 for our employee Christmas party, closed December 24 & 25 for Christmas Eve and Christmas Day, and reopening Friday, December 26 to serve you through the rest of the season.
