When we brought in a taco cart to Old Town’s streets at 9 p.m. on August 9, 2012, we had one steak-taco recipe, a lot of optimism, and zero idea what Colorado’s unpredictable weather could do to a plan. Yet rain, snow, or swirling wind, we showed up every weekend until 2 a.m.—and you, Fort Collins, kept coming back for more.
Within three years we had gained enough notoriety for New Belgium Brewery to invite us to park outside its taproom and farmers’ markets asked us to join them on weekend, so by 2015 we upgraded to a trailer. A full food truck followed in 2017, giving Chef Cesar room to add nachos, chilaquiles, and his now-famous pepito sandwich inspired by his Mexico City roots. Berenice steered the business, insisting each guest be treated like family—an attitude that still guides every hire and hello.
Along the way, your votes crowned our tacos champions of The Coloradoan’s 2024 taco bracket, and this year USA TODAY placed us among its Restaurants of the Year.
